The diner pauses before entering, confronted briefly with their own reflection, an invitation to arrive consciously, to cross the threshold with intention. A red pig, wingless and grounded, presides over the space: the dreamed made real, the imagined made edible.
The tables carry the weight of the concept. Double tables, conceived as vehicles in transit, rotate gently as the tasting progresses, the body still, the sense of movement constant. Quadruple tables orbit a central sphere projecting the places that gave birth to each dish, the world rendered visible in the moment of tasting it. Beneath every chair, geographic coordinates mark the floor: a map of a culinary life assembled across borders, oceans and markets. Warm oak, microcement and woven textile hold the space in quiet neutrality, ceding the attention to what arrives on the plate. Red appears where it matters, spare, deliberate, alive. The design does not announce itself. It simply sets the conditions for something extraordinary to happen.
